Ingredients
  

  • 1 red bell pepper Diced for sweetness and color.
  • 1 cucumber Deseeded and sliced into half moons for freshness.
  • 1 head romaine Shredded for crispiness.
  • 2 cups frozen edamame Thawed to add protein and texture.
  • 1-2 carrots Sliced or peeled into ribbons for extra crunch.
  • 1 cup shredded red cabbage For an added crunch and beautiful color.
  • 3 scallions Sliced to enhance flavor.
  • 5-7 fresh basil leaves Sliced to bring in herbal notes.
  • 1/4 cup cilantro Finely chopped to add brightness.
  • 1/4 cup sliced almonds For a nutty crunch.
  • Salt & pepper To taste for seasoning.
  • 1 Jalapeño Sliced for garnish if you like some heat.
  • 1/4 cup cashew butter Creamy base for the dressing.
  • 2 tbsp soy sauce Adds umami depth to flavors.
  • 1 tbsp sesame oil Provides rich, nutty undertones.
  • 2 tsp sriracha For a spicy kick if desired.
  • 1/2 tsp garlic powder To deepen flavor profile.
  • 1/2 tsp ginger powder or fresh grated ginger Adds warmth and zing.
  • Juice of one lime For acidity and freshness.
  • 1/4 tsp lime zest Enhances lime flavor if desired.
  • 2 tbsp maple syrup Balances flavors with sweetness.
  • 3-4 tbsp water To adjust consistency as needed.

Method
 

  1. In a small bowl, combine all dressing ingredients except water and whisk together until well combined. Gradually add water one tablespoon at a time while whisking until you achieve your preferred dressing consistency.
  2. In a large salad bowl, combine the diced bell pepper, cucumber half moons, shredded romaine, carrot ribbons, shredded red cabbage, sliced scallions, basil leaves, cilantro, thawed edamame, and sliced almonds.
  3. Season the mixed vegetables lightly with salt and pepper to enhance their natural flavors.
  4. Pour in half of your prepared sesame cashew lime dressing over the salad mix and toss everything together gently until all the vegetables are evenly coated.
  5. Taste the salad and add more dressing if desired, saving some extra dressing for serving later if you prefer.
