  • 1 cup eggnog
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2-4 tablespoons water as needed

Method
 

Making the Crêpes
  1. In a blender, combine eggnog, flour, eggs, melted butter, vanilla, nutmeg, and salt. Blend until smooth.
  2. Let the batter rest for 20–30 minutes at room temperature.
  3. Heat a non-stick skillet over medium heat and lightly grease with butter.
  4. Pour 1/4 cup of batter into the skillet, swirling to coat the bottom.
  5. Cook for 1–2 minutes until golden underneath, then flip and cook another 30 seconds.
  6. Transfer to a plate and repeat with remaining batter.
  7. Serve warm with toppings of choice like whipped cream, fruit, or syrup.
