Ingredients
  

Enchilada Filling
  • 1 lb ground turkey or chicken
  • 1 cup diced bell peppers mixed colors
  • 1 cup diced onion
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
Enchilada Sauce
  • 1 cup tomato sauce no added sugar
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
Tortillas
  • 8 pieces Whole30 compliant tortillas such as cassava flour tortillas
Toppings
  • 1 avocado sliced
  • 1 cup fresh cilantro chopped
  • 1 lime cut into wedges

Method
 

Prepare the Filling
  1. In a skillet over medium heat, add olive oil and sauté onions and garlic until translucent.
  2. Add ground turkey and cook until browned, breaking it apart with a spatula.
  3. Stir in bell peppers, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
Make the Sauce
  1. In a mixing bowl, combine tomato sauce, olive oil, smoked paprika, garlic powder, onion powder, and salt.
  2. Mix well until smooth.
Assemble the Enchiladas
  1. Preheat the oven to 375°F (190°C).
  2. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  3. Place a tortilla on a flat surface, add a portion of the filling, roll it up, and place seam-side down in the baking dish.
  4. Repeat with remaining tortillas and filling.
  5. Pour the remaining enchilada sauce over the rolled tortillas.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes until bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes.
  2. Top with sliced avocado, chopped cilantro, and lime wedges before serving.
