Method
Prepare the Filling
- In a skillet over medium heat, add olive oil and sauté onions and garlic until translucent.
- Add ground turkey and cook until browned, breaking it apart with a spatula.
- Stir in bell peppers, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
Make the Sauce
- In a mixing bowl, combine tomato sauce, olive oil, smoked paprika, garlic powder, onion powder, and salt.
- Mix well until smooth.
Assemble the Enchiladas
- Preheat the oven to 375°F (190°C).
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Place a tortilla on a flat surface, add a portion of the filling, roll it up, and place seam-side down in the baking dish.
- Repeat with remaining tortillas and filling.
- Pour the remaining enchilada sauce over the rolled tortillas.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until bubbly.
Serve
- Remove from the oven and let cool for a few minutes.
- Top with sliced avocado, chopped cilantro, and lime wedges before serving.
