Ingredients
  

Tortilla Base
  • 4 pieces large flour tortillas
Vegetable Filling
  • 1 cup cream cheese softened
  • 1 cup bell peppers finely chopped
  • 1 cup cucumbers finely chopped
  • 1 cup carrots grated
  • 1 cup spinach leaves washed and dried
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the softened cream cheese, garlic powder, dried oregano, salt, and black pepper. Mix until smooth.
  2. Add the chopped bell peppers, cucumbers, grated carrots, and spinach leaves to the cream cheese mixture. Stir until well combined.
Assemble the Roll Ups
  1. Lay a tortilla flat on a cutting board. Spread a generous layer of the vegetable filling evenly over the tortilla.
  2. Starting from one end, roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
Slice and Serve
  1. Using a sharp knife, slice each rolled tortilla into 1-inch pieces. Arrange on a serving platter.
  2. Cover with plastic wrap and refrigerate until ready to serve.

Notes
