Method
 

  1. Heat oil in a pan over medium heat, then add diced onion, minced ginger, minced garlic, and all spices including onion powder, paprika, smoked paprika, black pepper, sea salt, and cayenne pepper. Sauté everything together for about 3-4 minutes until fragrant and softened.
  2. Add the small broccoli florets along with vegetable broth to the pan where you sautéed your aromatics. Cook until the broccoli is tender yet still has a slight crunch—this should take around 10 minutes.
  3. While your broccoli cooks, take a medium bowl and combine water, soy sauce, rice vinegar (or balsamic), maple syrup, and cornstarch together. Whisk everything until well blended ensuring there are no lumps from cornstarch.
  4. Once your broccoli has reached tenderness, pour in the prepared sauce mixture along with rinsed chickpeas into the pan containing broccoli. Allow this mixture to come to a gentle boil so that it simmers nicely.
  5. Continue cooking for a few more minutes until everything is heated through thoroughly and slightly thickened from cornstarch activation in your sauce. Taste it at this stage and adjust seasonings—adding more salt, pepper, or cayenne if desired.
