Method
 

  1. Preheat your oven to 400 degrees F to ensure it's hot enough to cook everything evenly.
  2. Combine all of the Lemon Garlic Marinade ingredients in a freezer-size sealable bag while reserving two tablespoons for later use on the vegetables.
  3. Add the chicken to the marinade bag, seal it tightly, and turn to coat thoroughly before letting it marinate at room temperature for about 20 minutes or in the fridge for up to four hours.
  4. Line a large sheet pan with foil for easy cleanup and spray it lightly with cooking spray before adding your prepared ingredients.
