Ingredients
  

Marinade
  • 1/4 cup miso paste white or yellow miso
  • 3 tablespoons soy sauce low sodium preferred
  • 2 tablespoons honey or maple syrup
  • 4 cloves garlic minced
  • 1 tablespoon sesame oil for flavor
  • 1 teaspoon rice vinegar for acidity
Chicken
  • 4 pieces boneless chicken thighs skinless preferred
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together miso paste, soy sauce, honey, minced garlic, sesame oil, and rice vinegar until smooth.
  2. Reserve 1/4 cup of the marinade for later use.
Marinate the Chicken
  1. Add the chicken thighs to the bowl with the remaining marinade, ensuring they are well coated.
  2. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cook the Chicken
  1. Heat a skillet over medium heat and add the marinated chicken, cooking for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  2. Brush the chicken with the reserved marinade during the last few minutes of cooking.
Serve
  1. Remove the chicken from the skillet and let it rest for a few minutes.
  2. Slice the chicken and serve garnished with green onions and toasted sesame seeds.
