Ingredients
  

  • 450 grams ground chicken Fresh ground chicken keeps these meatloaves moist and flavorful.
  • 60 grams grated Parmesan cheese Adds rich, cheesy flavor to the mixture.
  • 60 grams breadcrumbs Helps bind the meatloaf while providing texture.
  • 15 grams fresh parsley, finely chopped Brightens up the dish with freshness.
  • 3 cloves garlic, minced Infuses the loaves with aromatic goodness.
  • 1 large egg, beaten Acts as a binder for the ingredients.
  • 1 teaspoon dried oregano Adds an Italian touch to enhance flavor.
  • 0.5 teaspoon fine sea salt Essential for seasoning the meat mixture.
  • 0.25 teaspoon freshly ground black pepper Provides a hint of spice to balance flavors.
  • 60 millilitres whole milk Keeps the loaves tender and moist during baking.
  • 2 tablespoons extra virgin olive oil Drizzled on top for added richness and flavor.
  • 25 grams grated mozzarella cheese (optional) For an extra cheesy topping that melts beautifully.

Method
 

  1. Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, thoroughly combine ground chicken, Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper.
  3. Add milk to the mixture and mix gently until uniform and cohesive.
  4. Divide mixture evenly and shape into four compact mini loaves. Place each onto the prepared baking sheet, with space between them.
  5. Drizzle each loaf with olive oil. Optionally, sprinkle mozzarella cheese over the tops. Bake for 25–30 minutes, until golden and internal temperature reaches 74°C.
  6. Remove from oven and allow to rest for 5 minutes before serving.
