Ingredients
  

Cod Fillets
  • 4 fillets cod skinless
Ginger Soy Glaze
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon soy sauce low sodium
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon rice vinegar
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Glaze
  1. In a mixing bowl, whisk together the grated ginger, soy sauce, honey, sesame oil, minced garlic, and rice vinegar until well combined.
Marinate the Cod
  1. Place the cod fillets in a baking dish and pour the ginger soy glaze over them. Let marinate for 10 minutes.
Bake the Cod
  1. Preheat the oven to 400°F (200°C). Bake the marinated cod for 10 minutes or until the fish flakes easily with a fork.
Garnish and Serve
  1. Remove the cod from the oven, garnish with sliced green onions and toasted sesame seeds, and serve immediately.
