Ingredients
  

  • 4 pieces chicken breasts Cubed for easy skewering.
  • 3 tbsp olive oil For marinating and grilling the chicken.
  • 2 tbsp honey Adds a touch of sweetness to balance the flavors.
  • 2 tbsp apple cider vinegar For tanginess in the marinade.
  • ½ tsp kosher salt Essential for seasoning the chicken.
  • ½ tsp oregano Provides an aromatic flavor typical in Greek cuisine.
  • ½ tsp pepper Adds a little heat to the marinade.
  • ¾ cup Greek yogurt The base for the creamy sauce.
  • ¼ cup dill Finely chopped to incorporate freshness into the sauce.
  • 1 clove garlic Minced for added depth of flavor.
  • 2 tbsp grated cucumber Squeeze any excess water out to prevent dilution of the sauce.
  • 1 tbsp lemon juice Brightens up the yogurt sauce and adds acidity.
  • 1 pinch kosher salt To taste in the yogurt sauce.

Method
 

  1. Marinate the chicken by tossing cubed chicken with olive oil, honey, apple cider vinegar, kosher salt, oregano, and pepper in a large bowl until well coated. Allow it to marinate while you preheat your grill and prepare the yogurt sauce.
  2. Clean and oil your grill grates thoroughly before preheating it to 350 degrees Fahrenheit (medium heat).
  3. In a separate bowl, combine Greek yogurt, chopped dill, minced garlic, grated cucumber, lemon juice, and kosher salt. Cover it and refrigerate until serving time.
  4. Thread the marinated chicken pieces onto skewers evenly.
  5. Place the prepared skewers directly on the grill grates and cook them for approximately 5-6 minutes on each side or until their internal temperature reaches 165 degrees F.
  6. Once grilled to perfection, serve the chicken skewers warm alongside your chilled yogurt sauce for dipping or drizzling over top.
