  • 1/4 cup all-purpose flour Helps thicken the soup.
  • 1/2 teaspoon smoked paprika Adds smokiness and warmth.
  • 3 cups vegetable broth Choose a flavorful broth for a richer taste.
  • 4 cups chopped broccoli Fresh broccoli offers great nutrition and texture.
  • 2 cups 1% milk Low-fat milk keeps the soup creamy.
  • 4 oz cheddar cheese Shredded; use sharp cheddar for maximum cheesy goodness.

Method
 

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion, carrot, and celery and cook for 10 minutes, stirring frequently.
  3. Add the garlic and continue to cook over medium heat for one minute.
  4. Add the smoked paprika and flour and cook for one minute, stirring until the vegetables are coated with flour.
  5. Add the broth and broccoli and bring to a simmer.
  6. Simmer the broccoli for 8-9 minutes until softened.
  7. Once tenderized, add your low-fat milk and heat gently.
