Ingredients
  

  • 6 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup chopped spinach
  • 1/4 cup diced bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cooked bacon or turkey sausage optional

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with silicone molds.
  2. In a blender, combine eggs, Greek yogurt, and cottage cheese. Blend until smooth and frothy.
  3. Pour the mixture into a large bowl. Stir in cheddar cheese, chopped spinach, and diced bell pepper. Season with salt and pepper.
  4. Pour the mixture evenly into muffin cups. If using, add the bacon or turkey sausage to each cup.
  5. Bake for 22–25 minutes until the centers are set and the tops are lightly golden. Let cool for 5 minutes before removing from the pan.
