Prepare Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and place them on a baking sheet.
- Bake for 30-35 minutes, or until tender.
Cook Ground Turkey Filling
- In a skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes.
- Add the diced onion, garlic, and bell pepper to the skillet and sauté until softened, about 5 minutes.
- Stir in cumin, paprika, salt, black pepper, black beans, and corn. Cook for an additional 5 minutes.
Assemble and Serve
- Once the sweet potatoes are cooked, remove them from the oven and let cool slightly.
- Cut the sweet potatoes in half lengthwise and scoop out a small portion of the flesh to create space for the filling.
- Fill each sweet potato half with the ground turkey mixture and top with shredded cheddar cheese.
- Return to the oven for 5-10 minutes, until the cheese is melted.
- Serve topped with Greek yogurt and green onions.
