Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes washed and scrubbed
Ground Turkey Filling
  • 1 lb ground turkey lean
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup bell pepper diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup cheddar cheese shredded
Toppings
  • 1/2 cup Greek yogurt for serving
  • 1/4 cup green onions sliced

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and place them on a baking sheet.
  3. Bake for 30-35 minutes, or until tender.
Cook Ground Turkey Filling
  1. In a skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes.
  2. Add the diced onion, garlic, and bell pepper to the skillet and sauté until softened, about 5 minutes.
  3. Stir in cumin, paprika, salt, black pepper, black beans, and corn. Cook for an additional 5 minutes.
Assemble and Serve
  1. Once the sweet potatoes are cooked, remove them from the oven and let cool slightly.
  2. Cut the sweet potatoes in half lengthwise and scoop out a small portion of the flesh to create space for the filling.
  3. Fill each sweet potato half with the ground turkey mixture and top with shredded cheddar cheese.
  4. Return to the oven for 5-10 minutes, until the cheese is melted.
  5. Serve topped with Greek yogurt and green onions.
