- Peel the onions and slice into ½-inch thick rings. Separate each ring carefully.
- In a bowl, whisk flour, cornstarch, baking powder, salt, pepper, and paprika.
- Gradually whisk in the cold sparkling water until batter is smooth.
- Heat oil in a deep fryer or pot to 350°F (175°C).
- Dip onion rings into batter, allowing excess to drip off. Coat with breadcrumbs if desired.
- Fry in batches for 2–3 minutes until golden and crispy. Avoid overcrowding.
- Remove with slotted spoon and drain on a wire rack or paper towels.
- Serve hot with your favorite dipping sauce.
