  • 2 large yellow or sweet onions
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup cold sparkling water or club soda
  • 1 cup breadcrumbs or panko optional
  • Oil for frying

Method
 

Frying Process
  1. Peel the onions and slice into ½-inch thick rings. Separate each ring carefully.
  2. In a bowl, whisk flour, cornstarch, baking powder, salt, pepper, and paprika.
  3. Gradually whisk in the cold sparkling water until batter is smooth.
  4. Heat oil in a deep fryer or pot to 350°F (175°C).
  5. Dip onion rings into batter, allowing excess to drip off. Coat with breadcrumbs if desired.
  6. Fry in batches for 2–3 minutes until golden and crispy. Avoid overcrowding.
  7. Remove with slotted spoon and drain on a wire rack or paper towels.
  8. Serve hot with your favorite dipping sauce.
