Method
- Place silicone molds on a tray and lightly spray with non-stick spray if needed.
- Pour the fruit juice into a saucepan off heat and sprinkle gelatin on top. Let it bloom for 5 minutes.
- Turn on low heat and stir gently until the gelatin fully dissolves. Do not boil. Add sweetener and lemon juice.
- Use a dropper or spoon to fill the molds with the mixture. Work quickly before it sets.
- Refrigerate the filled molds for at least 2 hours until gummies are firm.
- Pop the gummies out of molds and store in an airtight container in the refrigerator.
