Ingredients
  

  • 1 pound tomatillos, husked and rinsed
  • 1 jalapeño or serrano pepper
  • 2 cloves garlic, unpeeled
  • 1/2 white onion, peeled
  • 1/2 cup fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt

Method
 

  1. Preheat your oven to broil. Arrange tomatillos, jalapeño, garlic, and onion on a baking sheet. Broil for 5-7 minutes, flipping halfway, until charred.
  2. Remove the garlic skin and transfer all roasted ingredients to a blender.
  3. Add cilantro, lime juice, and salt. Blend until smooth or leave slightly chunky.
  4. Taste and adjust seasoning with more salt or lime if needed.
  5. Let it chill in the fridge for at least 30 minutes before serving.
