  • 1 cup panko breadcrumbs
  • 2 large eggs beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/3 cup honey
  • 1 teaspoon cracked black pepper
  • 8 ounces elbow macaroni
  • 2 tablespoons butter for sauce
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Method
 

  1. Cut chicken into bite-sized pieces and season with salt and garlic powder.
  2. Dip chicken pieces into beaten eggs, then coat with panko breadcrumbs.
  3. Fry chicken in hot oil until golden and crispy; set aside on paper towels.
  4. Cook macaroni according to package directions; drain and set aside.
  5. In a saucepan, melt butter, whisk in flour, then slowly add milk and cream.
  6. Stir in shredded cheddar and mozzarella until melted and smooth.
  7. In a small pan, heat honey and black pepper until combined to create glaze.
  8. Pour mac and cheese into bowls, top with crispy chicken.
  9. Drizzle honey pepper glaze over chicken and garnish if desired.
