Method
 

  1. Prepare the Marinade: Combine honey, olive oil, apple cider vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper in a medium bowl. Whisk until all ingredients are well blended.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated before sealing or covering.
  3. Refrigerate: Allow the chicken to marinate in the refrigerator for at least 30 minutes; however, letting it sit for 2 to 4 hours will yield more flavorful results.
  4. Prepare Feta Mixture & Preheat Oven: Mix crumbled feta cheese with a drizzle of olive oil and season lightly with salt and black pepper in a small bowl while preheating your oven to 400°F (200°C).
  5. Bake the Chicken: After removing chicken from marinade and discarding excess liquid, place them in a baking dish. Spoon the prepared feta mixture over each breast before baking for 25-30 minutes until cooked through.
  6. Serve & Garnish: Once baked to perfection at an internal temperature of 165°F (75°C), allow the chicken to rest briefly before garnishing with parsley and serving alongside lemon wedges for an extra burst of flavor.
