Ingredients
  

Meatballs
  • 1 lb ground beef or ground lamb
  • 1/4 cup bread crumbs preferably whole wheat
  • 1 large egg beaten
  • 1 tbsp garam masala or curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh cilantro chopped
Curry Sauce
  • 2 tbsp vegetable oil
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tbsp curry powder
  • 1 can coconut milk 13.5 oz
  • 1 cup chicken broth
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp sugar optional

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, bread crumbs, egg, garam masala, cumin, coriander, salt, black pepper, and cilantro.
  3. Mix until well combined, then form into 1-inch meatballs.
  4. Place meatballs on a baking sheet and bake for 20 minutes or until cooked through.
Make Curry Sauce
  1. In a skillet, heat vegetable oil over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add curry powder and cook for 1 minute until fragrant.
  5. Pour in coconut milk and chicken broth, stirring to combine.
  6. Bring to a simmer and let cook for 10 minutes.
  7. Add lime juice and sugar, then stir in the baked meatballs.
  8. Simmer for an additional 5 minutes to heat through.
Serve
  1. Serve the meatballs in curry sauce over rice or with naan.
  2. Garnish with additional cilantro if desired.

Notes
