  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 1.5 cups brown sugar packed
  • 2 large eggs
  • 2 cups unsweetened applesauce
  • 0.5 cup buttermilk
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts optional
  • 0.5 cup raisins optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each. Stir in applesauce, buttermilk, and vanilla.
  5. Gradually add the dry ingredients into the wet mixture until just combined. Fold in walnuts and raisins if using.
  6. Pour batter into the prepared baking dish and smooth the top.
  7. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan before slicing and serving.
