Ingredients
  

Salad Base
  • 4 cups Brussels sprouts shredded
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup parmesan cheese grated
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded Brussels sprouts, cherry tomatoes, cucumber, red onion, and parmesan cheese.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until emulsified.
Combine and Serve
  1. Pour the dressing over the salad and toss to combine thoroughly.
  2. Serve immediately or refrigerate for up to 30 minutes before serving to allow flavors to meld.
