Ingredients
  

Pie Crust
  • 2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 6 tablespoons ice water
Pumpkin Filling
  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg beaten for egg wash

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly.
  2. Gradually add ice water, mixing until the dough comes together. Divide into two discs and refrigerate for 30 minutes.
Make the Pumpkin Filling
  1. In a bowl, mix pumpkin puree, brown sugar, cinnamon, and nutmeg until well combined.
Assemble the Hand Pies
  1. Preheat the oven to 375°F (190°C). Roll out one disc of dough on a floured surface to about 1/8 inch thick.
  2. Cut out circles using a pastry cutter. Place a tablespoon of pumpkin filling in the center of half the circles.
  3. Moisten the edges with water, place another circle on top, and press to seal. Use a knife to cut jack-o-lantern faces into the top crust.
Bake the Hand Pies
  1. Place the hand pies on a baking sheet lined with parchment paper. Brush with beaten egg.
  2. Bake for 20-25 minutes or until golden brown. Let cool before serving.

Notes

These hand pies can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
