Ingredients
  

  • 1.5 lbs ground beef Forms the base of the meatballs.
  • 1 large egg Acts as a binder.
  • 0.5 cup seasoned panko breadcrumbs Adds texture.
  • 4 cloves garlic Finely minced.
  • 0.25 cup sliced scallions Plus more for garnish.
  • 2 tablespoons jerk seasoning Provides Caribbean spice.
  • 1 teaspoon ginger paste Or 2 teaspoons freshly grated ginger.
  • to taste kosher salt Enhances flavors.
  • to taste black pepper Enhances flavors.
  • 2 tablespoons unsalted butter Used to sauté.
  • 1 tablespoon olive oil Aids in browning.
  • 1 shallot finely chopped Contributes sweetness.
  • 3 cloves garlic Minced for sauce.
  • 1 small green bell pepper Thinly sliced.
  • 1 small red bell pepper Thinly sliced.
  • 3 teaspoons Jamaican curry powder Infuses spice.
  • 1 can full-fat coconut milk Creates creamy sauce.
  • as desired rice For serving.
  • as desired sliced scallions For serving.

Method
 

  1. Preheat the oven and prepare a baking sheet.
  2. In a bowl, combine ground beef, egg, breadcrumbs, garlic, scallions, jerk seasoning, ginger, salt, and pepper. Mix well and form into meatballs.
  3. Heat olive oil in a pan and brown the meatballs on all sides.
  4. In the same pan, add butter, shallot, garlic, and bell peppers. Sauté until softened.
  5. Stir in curry powder and coconut milk, then return meatballs to the pan. Simmer until cooked through.
  6. Serve meatballs with rice and garnish with scallions.
