- Preheat the oven and prepare a baking sheet.
- In a bowl, combine ground beef, egg, breadcrumbs, garlic, scallions, jerk seasoning, ginger, salt, and pepper. Mix well and form into meatballs.
- Heat olive oil in a pan and brown the meatballs on all sides.
- In the same pan, add butter, shallot, garlic, and bell peppers. Sauté until softened.
- Stir in curry powder and coconut milk, then return meatballs to the pan. Simmer until cooked through.
- Serve meatballs with rice and garnish with scallions.
