Ingredients
  

  • 2 pounds Ground Chicken You can substitute with ground turkey or lean beef.
  • 1 cup Parmesan Cheese Shredded; Romano cheese works too.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs are an option as well.
  • 2 large Eggs Essential for binding the mixture together.
  • 4 cloves Minced Garlic Adjust according to your garlic preference.
  • 1 teaspoon Garlic Powder For added garlic flavor.
  • 1 teaspoon Onion Powder Enhances the overall taste profile.
  • 1 teaspoon Dried Basil Adds a lovely herbal note.
  • 1 teaspoon Dried Parsley For freshness and color.
  • 1 teaspoon Salt Adjust to taste for seasoning.
  • 1/2 teaspoon Black Pepper Adjust to taste as well for spice.
  • 1/2 cup Whole Milk You can use plant milk if dairy-free is preferred.
  • 2 tablespoons Unsalted Butter Used for glazing the meatloaf before baking.
  • 1/4 cup Additional Parmesan For sprinkling on top before serving.
  • 2 tablespoons Fresh Parsley For garnish and added freshness.

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground chicken, parmesan cheese, panko breadcrumbs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, eggs, and milk. Mix everything gently until just combined; avoid overmixing to keep the meatloaf tender.
  3. Transfer the mixture into a greased loaf pan or shape it into a loaf on a lined baking sheet. Make sure it's evenly shaped so it cooks uniformly throughout.
  4. Melt the unsalted butter in a small bowl and mix in some additional parmesan cheese. Brush this mixture over the top of your meatloaf to create a deliciously rich glaze that adds flavor and enhances browning.
  5. Place the meatloaf in your preheated oven and bake for about 45 minutes or until it reaches an internal temperature of 165°F (75°C). Basting halfway through helps keep it juicy.
  6. Once done, remove from the oven and let it rest for a few minutes before slicing. Garnish with fresh parsley before serving to add a pop of color and freshness to this comforting dish!
