Ingredients
  

Chicken and Gnocchi
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 16 oz gnocchi store-bought or homemade
  • 1 tbsp olive oil for cooking chicken
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Creamy Sauce
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream for creaminess
  • 1 lemon juice and zest for brightness
  • 2 cloves garlic minced
  • 1 cup fresh spinach optional, for added nutrition
  • 1/2 cup Parmesan cheese grated, for flavor

Method
 

Cook the Chicken
  1. In a large pot, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the pot and set aside.
Prepare the Sauce
  1. In the same pot, add minced garlic and sauté for 1 minute until fragrant.
  2. Pour in the chicken broth, heavy cream, lemon juice, and zest. Stir to combine.
  3. Bring the mixture to a simmer.
Cook the Gnocchi
  1. Add the gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes until they float to the top.
  2. Stir in the cooked chicken and fresh spinach, cooking until the spinach wilts, about 2 minutes.
Finish and Serve
  1. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
  2. Serve hot, garnished with extra lemon zest and Parmesan if desired.
