Method
Cook the Chicken
- In a large pot, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the pot and set aside.
Prepare the Sauce
- In the same pot, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth, heavy cream, lemon juice, and zest. Stir to combine.
- Bring the mixture to a simmer.
Cook the Gnocchi
- Add the gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes until they float to the top.
- Stir in the cooked chicken and fresh spinach, cooking until the spinach wilts, about 2 minutes.
Finish and Serve
- Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with extra lemon zest and Parmesan if desired.
