Ingredients
  

Salad Base
  • 4 cups kale stems removed, chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 cup Parmesan cheese grated
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chopped kale, cherry tomatoes, and cucumber.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, grated Parmesan cheese, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss until the kale and vegetables are evenly coated.
  2. Serve immediately, garnished with additional Parmesan if desired.
