Prepare the Eggplant
- Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for about 10 minutes to sweat.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
Season and Air Fry
- In a mixing bowl, toss the eggplant slices with olive oil, garlic powder, paprika, and black pepper until evenly coated.
- Preheat the air fryer to 375°F (190°C).
- Arrange the eggplant slices in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
Serve
- Remove the eggplant from the air fryer and serve warm as a side dish or snack.
