Ingredients
  

Eggplant Preparation
  • 2 medium eggplants sliced into 1/2 inch rounds
  • 1 teaspoon salt for sweating the eggplant
  • 1 tablespoon olive oil for brushing
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper

Method
 

Prepare the Eggplant
  1. Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for about 10 minutes to sweat.
  2. Rinse the eggplant slices under cold water and pat them dry with paper towels.
Season and Air Fry
  1. In a mixing bowl, toss the eggplant slices with olive oil, garlic powder, paprika, and black pepper until evenly coated.
  2. Preheat the air fryer to 375°F (190°C).
  3. Arrange the eggplant slices in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
Serve
  1. Remove the eggplant from the air fryer and serve warm as a side dish or snack.
