  • 1.5 teaspoons pumpkin pie spice
  • 0.5 teaspoon salt

  • 0.25 cup unsalted butter
  • 1.5 cups powdered sugar
  • 2 tablespoons maple syrup
  • 0.5 teaspoon vanilla extract

Method
 

Baking Process
  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk pumpkin puree, brown sugar, oil, eggs, and vanilla until smooth.
  3. In another bowl, mix flour, baking powder, baking soda, pumpkin spice, and salt.
  4. Gradually add dry ingredients to the wet mixture, stirring just until combined.
  5. Scoop 2-tablespoon mounds of batter onto baking sheets, spaced apart.
  6. Bake for 10-12 minutes or until tops spring back; cool on wire rack.
  7. For filling, beat cream cheese and butter until smooth.
  8. Add powdered sugar gradually, then mix in maple syrup and vanilla until fluffy.
  9. Spread or pipe filling onto flat side of a cookie, then top with another cookie.
  10. Repeat with remaining cookies to form whoopie pies.
