Baking Process
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a bowl, whisk pumpkin puree, brown sugar, oil, eggs, and vanilla until smooth.
- In another bowl, mix flour, baking powder, baking soda, pumpkin spice, and salt.
- Gradually add dry ingredients to the wet mixture, stirring just until combined.
- Scoop 2-tablespoon mounds of batter onto baking sheets, spaced apart.
- Bake for 10-12 minutes or until tops spring back; cool on wire rack.
- For filling, beat cream cheese and butter until smooth.
- Add powdered sugar gradually, then mix in maple syrup and vanilla until fluffy.
- Spread or pipe filling onto flat side of a cookie, then top with another cookie.
- Repeat with remaining cookies to form whoopie pies.

Notes
Store whoopie pies in an airtight container in the fridge. They can also be microwaved for a few seconds to enjoy warm.
