Prepare the Chickpeas

- Add the drained chickpeas and cherry tomatoes to the skillet. Stir to combine and cook for 10 minutes, allowing the tomatoes to soften.
- Fold in the fresh spinach and cook until wilted, about 2 minutes.
Garnish and Serve
- Remove the skillet from heat and stir in the lemon juice and zest.
- Garnish with chopped parsley before serving.
