Ingredients
  

Chickpeas and Vegetables
  • 2 cans chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 1/4 cup fresh parsley chopped
  • 1 lemon zest for flavor
  • 1 lemon juice freshly squeezed

Method
 

Prepare the Chickpeas
  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, paprika, salt, and black pepper. Stir and cook for an additional 2 minutes until fragrant.
  3. Add the drained chickpeas and cherry tomatoes to the skillet. Stir to combine and cook for 10 minutes, allowing the tomatoes to soften.
  4. Fold in the fresh spinach and cook until wilted, about 2 minutes.
Garnish and Serve
  1. Remove the skillet from heat and stir in the lemon juice and zest.
  2. Garnish with chopped parsley before serving.
  3. Serve warm and enjoy your Marry Me Chickpeas!
