  • 1 cup Unsalted Butter softened
  • 2 tablespoons Fresh Thyme chopped
  • 2 tablespoons Fresh Rosemary chopped
  • 2 tablespoons Fresh Sage chopped
  • 4 cloves Garlic minced
  • 1 whole Lemon halved
  • 1 whole Onion quartered
  • 1 tablespoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Olive Oil
  • 1 cup Chicken or Turkey Stock

Method
 

Turkey Cooking Process
  1. Remove giblets and neck from the turkey cavity and pat dry with paper towels.
  2. Mix softened butter with chopped herbs, minced garlic, salt, and pepper.
  3. Carefully lift the turkey skin and spread herb butter underneath. Rub remaining butter over the skin.
  4. Stuff the cavity with halved lemon, onion wedges, garlic cloves, and whole herb sprigs.
  5. Tuck the wings and tie the legs with kitchen twine. Season the exterior with more salt and pepper.
  6. Place on a rack in a roasting pan. Roast at 325°F, basting every 45 minutes.
  7. Check internal temperature; turkey is done when thigh reaches 165°F.
  8. Let rest for 30 minutes before carving and serving.
