Ingredients
  

  • 1 can garbanzo beans 15-ounce, rinsed and drained
  • 1 can cannellini beans 15-ounce, rinsed and drained
  • 1 can kidney beans 15-ounce, rinsed and drained
  • 1/4 cup red onion chopped fine
  • 3/4 cup celery chopped
  • 1 small cucumber peeled, seeded, and chopped
  • 3/4 cup fresh Italian parsley chopped
  • 1/4 cup fresh basil chopped
  • 2 whole tomatoes chopped fine
  • 1/4 cup Parmesan cheese finely grated
  • 1/2 cup Kalamata olives optional
  • 1/3 cup pepperoncini optional
  • 1/4 cup extra-virgin olive oil for drizzling
  • 1-1/2 lemons juice freshly squeezed
  • 1 clove garlic peeled and minced
  • 1/2 teaspoon dried Italian seasoning
  • to taste ground pepper
  • to taste sea salt

Method
 

  1. In a large bowl, add all the ingredients for the salad including the rinsed beans, chopped vegetables, herbs, cheese, and optional olives or pepperoncini.
  2. In a small bowl or mason jar, whisk together the olive oil, lemon juice, minced garlic, and dried Italian seasoning until well combined.
  3. Drizzle the prepared dressing over the bean mixture and toss gently until everything is evenly coated.
  4. Refrigerate the salad for about 45-60 minutes before serving to allow flavors to meld beautifully.
  5. Once chilled, give the salad another light toss before serving it at your next gathering or enjoying it as a healthy meal throughout the week.
