Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into strips
  • 2 tbsp olive oil for marinade
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp garlic powder
  • 1 tsp oregano dried
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Taco Fillings
  • 8 small corn tortillas
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh parsley chopped
Yogurt Sauce
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, garlic powder, oregano, paprika, salt, and pepper. Add chicken strips and coat well. Marinate for at least 15 minutes.
Prepare the Yogurt Sauce
  1. In another bowl, mix Greek yogurt, lemon juice, minced garlic, salt, and pepper until well combined. Set aside.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken strips for about 5-7 minutes on each side, or until fully cooked.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side. Fill each tortilla with grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Drizzle with yogurt sauce.
