Ingredients
  

  • 4 pieces boneless, skinless chicken breasts Choose high-quality chicken for the best flavor.
  • 2 large zucchinis Sliced, fresh zucchinis add great texture and nutrition.
  • 1 cup cherry tomatoes Halved, juicy tomatoes bring sweetness and color.
  • ½ cup black olives Sliced, adds saltiness and depth of flavor.
  • ½ cup sun-dried tomatoes Chopped, contributes an intense tomato flavor.
  • ½ cup crumbled feta cheese Provides creaminess and tang; substitute with a dairy-free option if preferred.
  • 1 tbsp olive oil Use high-quality extra virgin olive oil for richness.
  • 1 tsp dried oregano Adds a classic Mediterranean herb flavor.
  • 1 tsp dried basil Complements the other ingredients beautifully.
  • ½ tsp garlic powder Infuses a subtle garlic taste without overpowering.
  • to taste salt & pepper Season to enhance all flavors.

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle the chicken breasts with olive oil and sprinkle them with oregano, basil, garlic powder, salt, and pepper. Massage the spices into the chicken.
  3. Grease a baking dish with olive oil. Place the seasoned chicken in the center and surround with sliced zucchinis, halved cherry tomatoes, and sliced black olives.
  4. Transfer the baking dish to the oven and bake uncovered for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. In the last few minutes of baking, sprinkle crumbled feta cheese over the top. Once done, remove from oven and let it cool slightly before serving hot garnished with fresh parsley.
