Method
 

  1. Step 1: Pre-cook the Sweet Potatoes - Start by placing the diced sweet potato cubes in a microwave-safe dish with ½ cup of water. Microwave them for about 4 minutes until they are mostly cooked but still firm enough to hold their shape during skillet cooking.
  2. Step 2: Season the Chicken - In a mixing bowl, season your chicken cubes with salt, freshly ground black pepper, chili powder, cumin, and dried oregano.
  3. Step 3: Brown the Chicken - Heat a large skillet over medium-high heat and add light olive oil when hot. Add the seasoned chicken pieces to the skillet; cook them for about 3-4 minutes until they are golden brown on all sides before adding in chopped onions and minced garlic.
  4. Step 4: Combine Ingredients - Once your onions become translucent (around 2 minutes), add in your pre-cooked sweet potatoes along with black beans, quartered grape tomatoes, green chiles (with their juice), lime juice, and medium salsa into the skillet mixture. Allow everything to cook together for about 3 minutes.
  5. Step 5: Melt Cheese & Serve - After warming through all ingredients thoroughly in your skillet mixture remove it from heat then top it generously with shredded cheddar cheese followed by covering it momentarily until melted perfectly atop your colorful dish before serving garnished with freshly chopped cilantro on top.
