Ingredients
  

Bacon Mixture
  • 8 slices bacon cooked and crumbled
Goat Cheese Base
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp honey for sweetness
  • 1 tbsp fresh chives chopped
Coating
  • 1/2 cup chopped pecans for coating
  • 1/4 cup dried cranberries chopped

Method
 

Prepare the Bacon
  1. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then crumble.
Make the Cheese Mixture
  1. In a mixing bowl, combine the softened goat cheese, cream cheese, honey, and chives. Mix until smooth.
Form the Log
  1. Lay out a piece of plastic wrap. Spoon the cheese mixture onto the wrap and shape it into a log. Wrap tightly and refrigerate for at least 30 minutes.
Coat the Log
  1. In a shallow dish, combine the chopped pecans and cranberries. Unwrap the cheese log and roll it in the mixture until fully coated.
Serve
  1. Transfer the log to a serving platter. Serve with crackers or sliced baguette.
