Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Vegetables and Cheese
  • 2 tablespoons olive oil for cooking
  • 1 cup fresh jalapeños sliced, seeds removed for less heat
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese or cheese of choice
  • 1 cup chicken broth low sodium preferred

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
  2. Heat olive oil in a large skillet over medium heat.
Cook the Chicken
  1. Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
  2. Remove the chicken from the skillet and set aside.
Sauté the Vegetables
  1. In the same skillet, add sliced jalapeños and cherry tomatoes. Sauté for about 3-4 minutes until softened.
  2. Pour in the chicken broth and bring to a simmer.
Combine and Melt Cheese
  1. Return the chicken to the skillet, nestling it into the vegetables.
  2. Sprinkle shredded cheddar cheese over the chicken and cover the skillet. Cook for an additional 5 minutes until the cheese is melted.
Serve
  1. Serve hot, garnished with additional jalapeños if desired.
