Method
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and nutmeg.
- In another bowl, mix sugar, eggnog, oil, eggs, vanilla extract, and rum extract until smooth.
- Pour wet mixture into dry ingredients and stir gently until just combined.
- Transfer batter to loaf pan and smooth the top.
- Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
