  • 0.5 teaspoon nutmeg
  • 1 cup granulated sugar
  • 1 cup eggnog
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon rum extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and nutmeg.
  3. In another bowl, mix sugar, eggnog, oil, eggs, vanilla extract, and rum extract until smooth.
  4. Pour wet mixture into dry ingredients and stir gently until just combined.
  5. Transfer batter to loaf pan and smooth the top.
  6. Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
