Ingredients
  

Quinoa Base
  • 1 cup quinoa rinsed and drained
  • 2 cups water for cooking quinoa
  • 1/2 teaspoon salt
Vegetables
  • 1 cup carrot grated
  • 1 cup zucchini grated and excess moisture squeezed out
  • 1/2 cup green onion chopped
Binding Ingredients
  • 2 large eggs
  • 1/2 cup bread crumbs or gluten-free alternative
  • 1/4 cup parmesan cheese grated
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper freshly ground
Cooking
  • 2 tablespoons olive oil for frying

Method
 

Cook Quinoa
  1. In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Prepare Mixture
  1. In a large mixing bowl, combine cooked quinoa, grated carrot, zucchini, green onion, eggs, bread crumbs, parmesan cheese, garlic powder, cumin, and black pepper. Mix until well combined.
Form Patties
  1. Using your hands, form the mixture into patties about 3 inches in diameter.
Cook Patties
  1. Heat olive oil in a frying pan over medium heat. Add patties and cook for 4-5 minutes on each side or until golden brown.
Serve
  1. Remove from the pan and drain on paper towels. Serve warm with your favorite dipping sauce.

Notes
