  • 3 ounces goat cheese crumbled

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into 1/2-inch cubes.
  3. Toss the sweet potatoes with 2 tablespoons of olive oil, salt, and pepper.
  4. Spread them on a baking sheet in a single layer.
  5. Roast for 30 minutes, flipping halfway through.
Cooking Sage
  1. In a small skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
  2. Fry the sage leaves for about 30 seconds until crisp.
  3. Remove the sage with a slotted spoon and drain on paper towels.
Serving
  1. Transfer roasted sweet potatoes to a serving dish.
  2. Crumble goat cheese over hot sweet potatoes.
  3. Garnish with crispy sage leaves and serve immediately.
