Start by heating olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
Add the ground turkey to the skillet and season it with salt and pepper. Cook until browned and fully cooked through, breaking it apart as it browns.
Stir in the diced zucchini and cooked groats of your choice into the turkey mixture. Sauté everything together for another 5-7 minutes until the zucchini is slightly tender.
Pour in the diced tomatoes along with oregano and smoked paprika. Stir well to combine all ingredients evenly while allowing flavors to meld together.
Remove from heat and fold in fresh basil before transferring everything into a greased casserole dish. Top generously with shredded Kerrygold aged cheddar cheese.
Preheat your oven to 375°F (190°C) and bake uncovered for about 15-20 minutes, or until the cheese is golden brown and bubbly on top.
