Ingredients
  

  • 3 pounds Yukon Gold potatoes
  • 5 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 1 cup chicken broth
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper, to taste
  • 1 tablespoon fresh parsley, chopped optional

Method
 

  1. Peel and cut the potatoes into thick wedges, about 6–8 pieces per potato.
  2. In a bowl, whisk together the olive oil, chicken broth, lemon juice, garlic, oregano, and salt.
  3. Preheat the oven to 400°F (200°C). Arrange the potato wedges in a single layer in a large roasting pan.
  4. Pour the lemon-garlic mixture over the potatoes and toss to coat. Cover the pan tightly with foil.
  5. Bake for 40 minutes covered.
  6. Remove foil, flip potatoes, and bake uncovered for another 30–40 minutes, flipping once halfway, until crisp and golden.
  7. Sprinkle with black pepper and parsley if using. Serve warm.
