Ingredients
  

Dough
  • 1 cup ricotta cheese well-drained
  • 1 cup almond flour
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg beaten
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 1/4 cup sliced almonds for garnish
  • 2 tablespoons powdered sugar for dusting

Method
 

Prepare the dough
  1. In a mixing bowl, combine ricotta cheese, almond flour, granulated sugar, vanilla extract, beaten egg, baking powder, and salt. Mix until smooth.
  2. Cover the bowl and refrigerate the dough for 10 minutes.
Shape and bake
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Using a spoon, scoop out portions of the dough and shape them into small pillows. Place them on the prepared baking sheet.
  3. Sprinkle sliced almonds on top of each pillow.
  4. Bake in the preheated oven for 15 minutes or until lightly golden.
Serve
  1. Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
