Method
Prepare the dough
- In a mixing bowl, combine ricotta cheese, almond flour, granulated sugar, vanilla extract, beaten egg, baking powder, and salt. Mix until smooth.
- Cover the bowl and refrigerate the dough for 10 minutes.
Shape and bake
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a spoon, scoop out portions of the dough and shape them into small pillows. Place them on the prepared baking sheet.
- Sprinkle sliced almonds on top of each pillow.
- Bake in the preheated oven for 15 minutes or until lightly golden.
Serve
- Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
