Ingredients
  

  • 1.5 cups vegetable oil
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons cinnamon
  • 3 cups peeled and chopped apples
  • 1 cup chopped pecans

Method
 

  1. Preheat your oven to 325°F (163°C). Grease and flour a 9x13-inch baking pan or line with parchment paper.
  2. In a large mixing bowl, whisk together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients into the wet mixture. The batter will be thick.
  5. Fold in the chopped apples and chopped pecans until evenly distributed.
  6. Spread the batter evenly into your prepared pan.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for at least 20 minutes before slicing and serving.
