  • 2 cups mashed sweet potatoes Boil or roast until tender
  • 1 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Pie Crust
  • 1 9-inch unbaked pie crust

Method
 

Preparation
  1. Boil or roast the sweet potatoes until fork tender. Peel and mash until smooth.
  2. In a large bowl, mix the mashed sweet potatoes with sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  3. Pour the filling into the unbaked pie crust and smooth the top.
Baking
  1. Bake at 350°F (175°C) for 50–60 minutes or until the center is set and a knife inserted comes out clean.
  2. Cool on a wire rack, then chill before slicing and serving.
