Preparation
- Boil or roast the sweet potatoes until fork tender. Peel and mash until smooth.
- In a large bowl, mix the mashed sweet potatoes with sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Pour the filling into the unbaked pie crust and smooth the top.
Baking
- Bake at 350°F (175°C) for 50–60 minutes or until the center is set and a knife inserted comes out clean.
- Cool on a wire rack, then chill before slicing and serving.
