Ingredients
  

Mushroom Filling
  • 20-24 pieces mushrooms large, cleaned
  • 4 oz goat cheese softened
  • 2 cloves garlic minced
  • 1 tsp fresh thyme chopped
  • 1/4 cup breadcrumbs for topping
  • 2 tbsp olive oil for cooking and drizzling
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Wipe mushrooms clean and remove stems. Finely chop the stems and set aside.
  2. Sauté chopped mushroom stems with garlic and thyme in olive oil until soft, about 5 minutes. Let cool.
  3. Mix sautéed stems with goat cheese in a bowl. Season with salt and pepper.
  4. Fill each mushroom cap with the goat cheese mixture.
  5. Top each with breadcrumbs and drizzle with olive oil.
  6. Bake at 375°F for 18–20 minutes, until tops are golden and filling is heated through.
