Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs Choose based on preference for tenderness and flavor.
  • 1 cup pineapple juice Fresh or canned works well.
  • 1 can pineapple chunks 8 oz, drained.
  • ½ cup soy sauce Adds depth of flavor.
  • ½ cup brown sugar Balances saltiness and enhances sweetness.
  • 3 cloves garlic Minced.
  • 1 tablespoon cornstarch For thickening sauce.
  • 2 tablespoons water To mix with cornstarch.
  • 1 red bell pepper thinly sliced Adds color and crunch.
  • ½ teaspoon ground ginger Adds warm spiciness.
  • Salt & pepper To taste.
  • Cooked rice For serving.
  • Green onions & sesame seeds For garnish.

Method
 

  1. Prepare Your Slow Cooker: Place seasoned chicken in the slow cooker, ensuring it's evenly distributed for consistent cooking throughout.
  2. Mix Your Sauce: In a bowl, whisk together pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger until well combined, then pour this flavorful mixture over the chicken.
  3. Add Vegetables: Toss in pineapple chunks and thinly sliced red bell pepper on top of the chicken before covering it with a lid.
  4. Set Cooking Time: Cook on low for 5–6 hours or high for 3–4 hours until the chicken is tender and easy to shred.
  5. Thicken Your Sauce: Once cooked, remove the chicken and mix cornstarch with water; stir this into the sauce in your slow cooker and cook for an additional 15 minutes until thickened.
  6. Combine & Serve: Return the chicken back into the pot, coat it well with sauce, cook for another 5 minutes, then serve hot over rice garnished with green onions and sesame seeds.
