Ingredients
  

Hushpuppy Mixture
  • 1 cup mashed sweet potatoes cooked and cooled
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1/4 cup milk or buttermilk
  • 1/4 cup chopped green onions optional
Frying
  • 2 cups vegetable oil for frying

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine the mashed sweet potatoes, cornmeal, flour, baking powder, salt, and black pepper.
  2. Add the egg and milk, and mix until well combined. Stir in the chopped green onions if using.
Fry the Hushpuppies
  1. Heat the vegetable oil in a frying pan over medium heat until hot.
  2. Using a spoon or small scoop, drop spoonfuls of the mixture into the hot oil.
  3. Fry for about 3-4 minutes on each side, or until golden brown.
  4. Remove the hushpuppies with a slotted spoon and drain on paper towels.
Serve
  1. Serve warm as a side dish or appetizer.
