  • 3 cloves garlic Minced for aromatic richness.
  • 1 tbsp fresh ginger Grated to enhance the dish's flavor profile.
  • 1 tsp black pepper For a subtle kick of heat.
  • 1 tsp salt To season the beef effectively.
  • 2 lbs baby potatoes Halved for an easy roast.
  • 2 tbsp olive oil To help crisp up the potatoes.
  • 1 tsp dried rosemary or thyme For added herbal notes.

Method
 

  1. In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, black pepper, and salt until combined. Add the beef to the mixture and ensure it is well coated in the marinade. Cover and let it marinate for at least 1 hour in the refrigerator; overnight is ideal for enhanced flavor.
  2. Preheat your oven to 400°F (200°C) as you prepare your potatoes. In another bowl, toss the halved baby potatoes with olive oil, dried rosemary or thyme, salt, and pepper until they are evenly coated.
  3. Spread the marinated beef on a baking sheet lined with parchment paper or lightly greased. Arrange the seasoned potatoes around the beef so everything can roast together evenly.
  4. Place the baking sheet in the preheated oven and roast all ingredients for 30-35 minutes. Make sure to stir the potatoes halfway through cooking to ensure they brown evenly.
  5. Once cooked, remove from oven and let the beef rest for about 5-10 minutes before slicing it against the grain. Serve alongside your beautifully roasted potatoes drizzled with any remaining juices from the pan.
