Ingredients
  

  • 1.5 pounds ground beef
  • 0.75 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions chopped
  • a pinch salt
  • a pinch black pepper
  • 0.25 cup gochujang
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons ketchup

Method
 

  1. Preheat oven to 375°F and line a baking sheet with parchment.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, sesame oil, green onions, salt, and pepper. Mix until just combined.
  3. Shape mixture into a loaf and place on prepared sheet.
  4. Bake for 30 minutes.
  5. While baking, mix gochujang, brown sugar, rice vinegar, and ketchup in a small bowl until smooth.
  6. After 30 minutes, remove loaf from oven and spread glaze evenly over top.
  7. Return to oven and bake for an additional 15–20 minutes, until internal temp reaches 160°F.
  8. Let rest for 10 minutes before slicing and serving.

Notes

Feel free to swap beef for ground turkey or chicken for a lighter version. You can also add diced bell peppers or mushrooms for added texture.
