Method
- Preheat oven to 375°F and line a baking sheet with parchment.
- In a large bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, sesame oil, green onions, salt, and pepper. Mix until just combined.
- Shape mixture into a loaf and place on prepared sheet.
- Bake for 30 minutes.
- While baking, mix gochujang, brown sugar, rice vinegar, and ketchup in a small bowl until smooth.
- After 30 minutes, remove loaf from oven and spread glaze evenly over top.
- Return to oven and bake for an additional 15–20 minutes, until internal temp reaches 160°F.
- Let rest for 10 minutes before slicing and serving.

Feel free to swap beef for ground turkey or chicken for a lighter version. You can also add diced bell peppers or mushrooms for added texture.
